Ingredients

- 1 cup crushed pineapple
- 8 oz cream cheese
- 1 cup powdered sugar (or coconut sugar for a healthier option)
- ½ cup peanut butter (or sunflower seed butter for nut allergies)
- 1 cup unsweetened coconut flakes
- ½ cup chopped nuts (optional)
- Maraschino cherries for garnish
Instructions
- In a mixing bowl, combine the crushed pineapple, cream cheese, powdered sugar, and peanut butter. Mix gently until well-blended, being careful not to overmix.
- Fold in the coconut flakes and chopped nuts, if using, until the mixture takes on a dough-like consistency.
- Scoop out about a tablespoon of the mixture and roll it into a ball. Place them onto a baking sheet lined with parchment paper.
- Cover the baking sheet with plastic wrap and refrigerate for at least one hour to firm up.
- Top each ball with a maraschino cherry if desired before serving.
Notes
Best served fresh or within a week when stored in the refrigerator. Freezing is also an option for longer storage.
