Ingredients

  • 1 cup crushed pineapple
  • 8 oz cream cheese
  • 1 cup powdered sugar (or coconut sugar for a healthier option)
  • ½ cup peanut butter (or sunflower seed butter for nut allergies)
  • 1 cup unsweetened coconut flakes
  • ½ cup chopped nuts (optional)
  • Maraschino cherries for garnish

Instructions

  1. In a mixing bowl, combine the crushed pineapple, cream cheese, powdered sugar, and peanut butter. Mix gently until well-blended, being careful not to overmix.
  2. Fold in the coconut flakes and chopped nuts, if using, until the mixture takes on a dough-like consistency.
  3. Scoop out about a tablespoon of the mixture and roll it into a ball. Place them onto a baking sheet lined with parchment paper.
  4. Cover the baking sheet with plastic wrap and refrigerate for at least one hour to firm up.
  5. Top each ball with a maraschino cherry if desired before serving.

Notes
