Description

A delightful blend of sweet and spicy, this Pineapple Cowboy Candy transforms fresh pineapple into a unique treat perfect for various occasions.

Ingredients

Scale
  • 1 Fresh Pineapple, cut into bite-sized chunks
  • 1 cup Granulated Sugar
  • 1/2 cup Apple Cider Vinegar
  • 2 Red Jalapeños, sliced
  • 1 tsp Ground Cinnamon
  • 1 tsp Ground Ginger
  • 1/4 tsp Ground Cloves

Instructions

  1. Prepare the Pineapple: Cut the fresh pineapple into bite-sized chunks and remove the core.
  2. Create the Syrup: In a medium saucepan, combine the sugar, apple cider vinegar, ground cinnamon, ground ginger, and ground cloves. Stir over medium heat until the sugar dissolves.
  3. Add the Pineapple: Add the pineapple chunks to the saucepan and stir well to coat evenly.
  4. Incorporate the Jalapeños: Add the sliced red jalapeños and let the mixture simmer for about 20 minutes, stirring occasionally.
  5. Cool and Store: Remove from heat and allow to cool for a few minutes before transferring to sterilized jars.
  6. Refrigerate: Allow jars to cool completely before sealing and store in the fridge.

Notes

For a milder version, substitute red jalapeños with green bell peppers. Always cool down before sealing jars to avoid spoilage.
