- 1 cup granulated sugar
- ½ cup unsalted butter, room temperature
- ½ cup champagne or sparkling wine
- 2 large eggs
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- Pink food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 12-cup muffin tin with cupcake liners.
- Cream the unsalted butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then gradually add the champagne and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
- If desired, add pink food coloring and gently fold in.
- Evenly distribute the batter into the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For a lower glycemic index, consider using coconut sugar instead of granulated sugar. You can also use flax eggs for a vegan version.
