  • 1 box of white cake mix
  • 1 cup coconut milk
  • 3 large eggs
  • 1 cup shredded coconut
  • 1 cup sweetened condensed milk
  • Pink food coloring
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish.
  2. In a large mixing bowl, combine the coconut milk, eggs, and vanilla extract. Whisk until fully blended.
  3. Add the box of white cake mix to the wet ingredients and stir until just combined.
  4. Gently fold in the shredded coconut.
  5. Add a few drops of pink food coloring and stir until the desired hue is achieved.
  6. Pour the batter into the prepared baking dish and spread it evenly. Bake for 30 minutes.
  7. While baking, mix the sweetened condensed milk and powdered sugar for the topping.
  8. After baking, cool in the pan for at least 10 minutes before adding the topping and cutting into squares.
