- 1 box of white cake mix
- 1 cup coconut milk
- 3 large eggs
- 1 cup shredded coconut
- 1 cup sweetened condensed milk
- Pink food coloring
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish.
- In a large mixing bowl, combine the coconut milk, eggs, and vanilla extract. Whisk until fully blended.
- Add the box of white cake mix to the wet ingredients and stir until just combined.
- Gently fold in the shredded coconut.
- Add a few drops of pink food coloring and stir until the desired hue is achieved.
- Pour the batter into the prepared baking dish and spread it evenly. Bake for 30 minutes.
- While baking, mix the sweetened condensed milk and powdered sugar for the topping.
- After baking, cool in the pan for at least 10 minutes before adding the topping and cutting into squares.
