Description

A delightful twist on traditional Italian focaccia, infused with raspberry jam and fresh raspberries for a sweet bakery-style treat.


Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons instant yeast
  • 1 cup warm water (110°F/43°C)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 cup raspberry jam
  • 1 cup fresh raspberries

Instructions

  1. Prepare the dough by combining warm water, instant yeast, and sugar in a large mixing bowl. Let it sit for about 5 minutes until frothy.
  2. Mix the dry ingredients by whisking together all-purpose flour and salt in another bowl.
  3. Form the dough by pouring the flour mixture into the yeast mixture, adding 2 tablespoons of olive oil. Stir until shaggy dough forms.
  4. Knead the dough on a lightly floured surface for about 7-10 minutes until smooth and elastic.
  5. Let it rise by placing the dough in a lightly oiled bowl, covering with a damp cloth, and letting it rise for about 1 hour until doubled in size.
  6. Shape the focaccia by punching down the dough and transferring it to a well-oiled baking sheet, spreading it with fingers to create dimples.
  7. Add raspberry jam by spreading a layer over the dough and pressing fresh raspberries into it.
  8. Cover and let it rise for another 30 minutes while preheating the oven to 425°F (220°C).
  9. Bake the focaccia by drizzling with remaining olive oil, sprinkling with salt, and baking for 25-30 minutes until golden brown.
  10. Cool and serve by letting it sit on a wire rack for at least 10 minutes before slicing.

Notes

For a gluten-free version, use gluten-free all-purpose flour mixed with xanthan gum. Pair with soft cheese or enjoy with coffee or tea.
