Description

A delightful twist on the classic Italian dessert combining rich flavors with refreshing tartness from raspberries.


Ingredients

  • 2 cups fresh raspberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 2 eggs
  • 1/2 cup powdered sugar
  • 1 package ladyfingers
  • 1 cup espresso or strong coffee
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract

Instructions

  1. Mash half of the raspberries until slightly pureed and set aside the rest.
  2. Whip the heavy cream in a separate bowl until soft peaks form.
  3. Beat together mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  4. Fold the whipped cream into the mascarpone mixture, then fold in the mashed raspberries.
  5. Brew espresso and allow it to cool; quickly dip ladyfingers into coffee.
  6. Create a layer of coffee-soaked ladyfingers in a serving dish and spoon half of the mascarpone-raspberry mixture over them.
  7. Add another layer of ladyfingers followed by the remaining mascarpone mixture.
  8. Top with cocoa powder or extra raspberries, then refrigerate for 3 to 4 hours.

Notes

Serve with extra fresh raspberries or a raspberry coulis for decoration.
