A delightful twist on the classic Italian dessert combining rich flavors with refreshing tartness from raspberries.
Ingredients

- 2 cups fresh raspberries
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 2 eggs
- 1/2 cup powdered sugar
- 1 package ladyfingers
- 1 cup espresso or strong coffee
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
Instructions
- Mash half of the raspberries until slightly pureed and set aside the rest.
- Whip the heavy cream in a separate bowl until soft peaks form.
- Beat together mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- Fold the whipped cream into the mascarpone mixture, then fold in the mashed raspberries.
- Brew espresso and allow it to cool; quickly dip ladyfingers into coffee.
- Create a layer of coffee-soaked ladyfingers in a serving dish and spoon half of the mascarpone-raspberry mixture over them.
- Add another layer of ladyfingers followed by the remaining mascarpone mixture.
- Top with cocoa powder or extra raspberries, then refrigerate for 3 to 4 hours.
Notes
Serve with extra fresh raspberries or a raspberry coulis for decoration.
