- 2 1/4 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tablespoons cocoa powder
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup cream cheese frosting, for filling
Instructions
- Preheat your oven to 350ºF (175ºC).
- Line a baking sheet with parchment paper.
- In a large mixing bowl, beat together the softened butter and granulated sugar until pale and fluffy, about 3-5 minutes.
- Add in the egg and vanilla extract, mixing until fully combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually incorporate the dry mixture into the wet ingredients, mixing just until combined.
- Stir in the red food coloring, mixing until the dough is evenly colored.
- Using a cookie scoop or tablespoon, drop rounded balls of dough on the prepared baking sheet, spacing them about 2 inches apart.
- Using your thumb or the back of a measuring spoon, make an indentation in the center of each dough ball.
- Bake for 10-12 minutes, or until the edges are lightly browned.
- Remove cookies from the oven, let them cool for 5 minutes, then fill each thumbprint with cream cheese frosting.
Notes
Store cookies in an airtight container for up to 5 days. For longer storage, refrigerate for up to 2 weeks or freeze the dough for up to 3 months.
