Description

A delightful and nutritious Russian dessert made from fruit puree, water, and a hint of vanilla.


Ingredients

Scale
  • 2 cups Fruit Puree (strawberries, raspberries, or cherries)
  • 3 cups Water
  • 1 cup Sugar
  • 1/2 cup Cornstarch
  • 1 tsp Vanilla Extract
  • 1 tbsp Lemon Juice

Instructions

  1. Prepare the Fruit Puree by blending your choice of fruit in a food processor until smooth.
  2. Combine the prepared fruit puree with water in a medium saucepan and stir until well mixed.
  3. Heat the fruit-water mixture over medium flame and add sugar, stirring to dissolve it completely.
  4. Create a slurry by mixing cornstarch with a couple of tablespoons of cold water in a small bowl.
  5. Once the fruit mixture is hot (but not boiling), slowly pour in the cornstarch slurry while stirring until the mixture thickens (about 2-3 minutes).
  6. Remove from heat and stir in vanilla extract and lemon juice. Adjust sweetness or acidity as needed.
  7. Transfer to serving dishes and allow it to cool to room temperature before refrigerating for at least 2 hours to set.

Notes

Use filtered water for the best taste and experiment with seasonal fruits for different flavors.
