Description

A gut-friendly twist on traditional Irish soda bread, enriched with whole wheat flour, cheddar cheese, and fresh herbs.


Ingredients

  • 3 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 cup shredded cheddar cheese
  • 1/4 cup finely chopped fresh herbs (chives, rosemary, or thyme)
  • 1 cup yogurt (or buttermilk)
  • 1/2 cup water

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine whole wheat flour, baking soda, and salt. Whisk to blend.
  3. Stir in the shredded cheddar cheese and chopped herbs until evenly distributed.
  4. In a separate bowl, mix the yogurt and water until well combined.
  5. Create a well in the dry ingredients and pour in the wet mixture. Mix until just combined.
  6. Turn out the dough onto a floured surface and gently knead for about 30 seconds.
  7. Shape the dough into a round loaf and cut a deep cross on top.
  8. Place on a baking sheet and bake for approximately 30 minutes, or until golden brown.
  9. Cool on a wire rack for at least 10 minutes before slicing.

Notes

For a gluten-free option, substitute whole wheat flour with almond flour. For a vegan version, use dairy-free yogurt and cheese.
