Description
A gut-friendly twist on traditional Irish soda bread, enriched with whole wheat flour, cheddar cheese, and fresh herbs.

- 3 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 1 cup shredded cheddar cheese
- 1/4 cup finely chopped fresh herbs (chives, rosemary, or thyme)
- 1 cup yogurt (or buttermilk)
- 1/2 cup water
Instructions
- Preheat the oven to 425°F (220°C).
- In a large mixing bowl, combine whole wheat flour, baking soda, and salt. Whisk to blend.
- Stir in the shredded cheddar cheese and chopped herbs until evenly distributed.
- In a separate bowl, mix the yogurt and water until well combined.
- Create a well in the dry ingredients and pour in the wet mixture. Mix until just combined.
- Turn out the dough onto a floured surface and gently knead for about 30 seconds.
- Shape the dough into a round loaf and cut a deep cross on top.
- Place on a baking sheet and bake for approximately 30 minutes, or until golden brown.
- Cool on a wire rack for at least 10 minutes before slicing.
Notes
For a gluten-free option, substitute whole wheat flour with almond flour. For a vegan version, use dairy-free yogurt and cheese.
