A quick and nutritious sautéed dish featuring zucchini, mushrooms, and onions that elevates your vegetable medley to a culinary delight.


Ingredients

  • 2 Zucchini, sliced into semi-circles
  • 1 cup Mushrooms, sliced (cremini or shiitake recommended)
  • 1 Onion, sliced into rings
  • 2 tablespoons Olive oil (or avocado oil)
  • 2 cloves Garlic, minced
  • Salt and pepper, to taste
  • Optional herbs (thyme or basil), to taste

Instructions

  1. Prepare the Ingredients: Wash and slice zucchini, onions, and mushrooms.
  2. Heat the Pan: In a large skillet, heat olive oil over medium heat.
  3. Sauté the Onions: Add sliced onions and sauté for 3-5 minutes until translucent.
  4. Introduce the Mushrooms: Add sliced mushrooms and sauté for another 5 minutes.
  5. Add the Zucchini and Garlic: Stir in zucchini and garlic, cooking for an additional 5-7 minutes.
  6. Season and Serve: Season with salt and pepper. Add fresh herbs if desired and serve hot.

Notes

For a heartier meal, serve over quinoa or brown rice. Can also be used as a filling for wraps or omelets.
