Ingredients

  • 2 large Sweet Potatoes, peeled and chopped
  • 2 tbsp Olive Oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 Carrots, chopped
  • 2 stalks Celery, chopped
  • 4 cups Vegetable Broth
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1 tsp Dried Thyme
  • Salt and Pepper, to taste

Instructions

  1. Prepare your ingredients: Peel and chop the sweet potatoes, carrots, and celery into uniform pieces. Mince the garlic and finely chop the onion.
  2. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and celery, and sauté until translucent, about 5 minutes.
  3. Add garlic and carrots: Stir in minced garlic and chopped carrots, cooking for an additional 2-3 minutes until fragrant.
  4. Incorporate sweet potatoes: Add the sweet potatoes to the pot, stirring well. Cook for another 3 minutes.
  5. Pour in broth and add spices: Pour in the vegetable broth and add herbs, salt, and pepper. Bring to a boil, reduce heat and simmer for 20-25 minutes, or until tender.
  6. Blend for creaminess: Use an immersion blender to puree the soup until smooth. Alternatively, blend in batches carefully.
  7. Adjust seasoning and serve: Taste and adjust seasoning as needed. Serve hot, garnished with fresh herbs or olive oil.

Notes

For a creamier texture, stir in a splash of heavy cream or coconut milk before serving.
