Description

A hearty and comforting seafood stew featuring a medley of shrimp, mussels, and fish, combined with fresh vegetables and rich fish stock.


Ingredients

  • 1 pound shrimp
  • 1 pound mussels
  • 1 pound fish fillets (like cod or haddock)
  • 4 cups fish stock
  • 2 cups diced tomatoes
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced
  • 1 bell pepper (any color)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Wash and cut all the vegetables; dice the onion, bell pepper, and potatoes, and mince the garlic.
  2. Sauté the Aromatics: In a large pot, heat olive oil over medium heat and sauté diced onion and bell pepper for about 5 minutes until softened.
  3. Add Garlic and Tomatoes: Stir in minced garlic and canned diced tomatoes; cook for 2–3 minutes until fragrant.
  4. Incorporate the Potatoes and Stock: Add diced potatoes and pour in fish stock; bring to a gentle boil, then simmer for about 15 minutes until potatoes soften.
  5. Add Seafood to the Mix: Add fish fillets, shrimp, and mussels; cover and simmer for another 5–7 minutes until mussels open and seafood is cooked.
  6. Season and Serve: Stir in dried thyme and season with salt and pepper. Serve hot with fresh herbs if desired.

Notes

Serve with crusty bread or a fresh side salad. Top with sour cream or lemon for added brightness.
