- 1 pound shrimp
- 1 pound mussels
- 1 pound fish fillets (like cod or haddock)
- 4 cups fish stock
- 2 cups diced tomatoes
- 1 cup diced onion
- 2 cloves garlic, minced
- 2 medium potatoes, diced
- 1 bell pepper (any color)
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Prepare the Ingredients: Wash and cut all the vegetables; dice the onion, bell pepper, and potatoes, and mince the garlic.
- Sauté the Aromatics: In a large pot, heat olive oil over medium heat and sauté diced onion and bell pepper for about 5 minutes until softened.
- Add Garlic and Tomatoes: Stir in minced garlic and canned diced tomatoes; cook for 2–3 minutes until fragrant.
- Incorporate the Potatoes and Stock: Add diced potatoes and pour in fish stock; bring to a gentle boil, then simmer for about 15 minutes until potatoes soften.
- Add Seafood to the Mix: Add fish fillets, shrimp, and mussels; cover and simmer for another 5–7 minutes until mussels open and seafood is cooked.
- Season and Serve: Stir in dried thyme and season with salt and pepper. Serve hot with fresh herbs if desired.
Notes
Serve with crusty bread or a fresh side salad. Top with sour cream or lemon for added brightness.
