Description

A convenient and hearty alternative to traditional stuffed cabbage rolls, this slow cooker recipe is easy to prepare and full of flavor.


Ingredients

  • 1 medium head green cabbage, chopped into bite-sized pieces
  • 1 pound lean ground beef (or ground turkey)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 cup uncooked white or brown rice
  • 2 cups canned tomato sauce
  • 1 can (15 oz) crushed tomatoes
  • 2 cups beef broth (or vegetable broth)
  • 1 tablespoon brown sugar (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by chopping the cabbage, dicing the onion, and mincing the garlic.
  2. Sauté the onion in a skillet over medium heat for 3-4 minutes, then add the garlic and cook for another minute.
  3. Brown the ground beef in the skillet for 6-7 minutes, breaking it into small pieces.
  4. In a large bowl, combine the cabbage, onion and garlic mixture, ground beef, rice, tomato sauce, crushed tomatoes, beef broth, brown sugar, oregano, thyme, salt, and pepper.
  5. Transfer the mixture to the slow cooker and spread it evenly.
  6. Cover and cook on low for 4-6 hours or high for 2-3 hours until the cabbage is tender.
  7. Stir and serve hot, garnished with fresh herbs or cheese if desired.

Notes

For a lighter version, substitute ground beef with ground turkey and use brown rice for added fiber.
