  • Sharp Cheddar Cheese
  • Milk (whole or plant-based)
  • Sour Cream (or Greek yogurt)
  • Flour (all-purpose or gluten-free)
  • Spices (paprika, garlic powder, black pepper)
  • Green Onions

Instructions

  1. In a large skillet over medium heat, crumble the sausage until browned, about 5-7 minutes. Drain excess fat and scramble the eggs in the same skillet until fluffy.
  2. Warm flour tortillas in the microwave for 15-20 seconds. Spoon sausage and egg mixture onto each tortilla, sprinkle with cheddar cheese, and roll tightly.
  3. In a saucepan, melt 2 tablespoons of butter over medium heat, then whisk in flour until a golden roux forms (about 2-3 minutes). Gradually whisk in milk until desired gravy consistency is reached. Season with black pepper and spices.
  4. Place rolled enchiladas seam-side down in a baking dish. Pour gravy over enchiladas and sprinkle with remaining cheddar cheese.
