Ingredients
- Flour Tortillas

- Fresh, large Eggs
- Sharp Cheddar Cheese
- Milk (whole or plant-based)
- Sour Cream (or Greek yogurt)

- Spices (paprika, garlic powder, black pepper)
- Green Onions
Instructions
- In a large skillet over medium heat, crumble the sausage until browned, about 5-7 minutes. Drain excess fat and scramble the eggs in the same skillet until fluffy.
- Warm flour tortillas in the microwave for 15-20 seconds. Spoon sausage and egg mixture onto each tortilla, sprinkle with cheddar cheese, and roll tightly.
- In a saucepan, melt 2 tablespoons of butter over medium heat, then whisk in flour until a golden roux forms (about 2-3 minutes). Gradually whisk in milk until desired gravy consistency is reached. Season with black pepper and spices.
- Place rolled enchiladas seam-side down in a baking dish. Pour gravy over enchiladas and sprinkle with remaining cheddar cheese.
- Preheat oven to 350°F (175°C) and bake for about 20 minutes until cheese is bubbly and edges are crispy.
- Garnish with chopped green onions or chives before serving.
Notes
