- 3 cups Frozen Peas
- 1 Red Bell Pepper, diced
- 3 Green Onions, chopped
- 2 stalks Celery, diced
- 1 cup Mayonnaise (or Greek Yogurt)
- 1 tablespoon Dijon Mustard
- Salt and Pepper, to taste
Instructions
- Start with a bag of frozen peas. Do not thaw them, as you want them to stay firm. If using fresh peas, blanch them for about a minute in boiling water. Drain and cool quickly.
- Dice the red bell pepper, chop the green onions, and dice the celery, aiming for uniform sizes.
- In a large mixing bowl, add the frozen peas, chopped bell pepper, green onions, and celery. Mix well.
- In a small bowl, combine the mayonnaise, Dijon mustard, salt, and pepper. Stir until smooth.
- Pour the dressing over the vegetable mixture and gently fold to combine.
- Optional: Let the salad chill in the refrigerator for at least an hour before serving.
Notes
For a lighter option, consider using Greek yogurt instead of mayonnaise. Chilling the salad enhances flavors.
