  • 12 oz linguine or spaghetti

  • 1 ½ pounds large shrimp, peeled and deveined

  • 2 tablespoons olive oil, divided

  • 3 tablespoons butter, divided

  • 6 cloves garlic, minced

  • 12 teaspoons red pepper flakes (adjust to taste)

  • ½ cup white wine or chicken broth (optional)

  • 2 tablespoons fresh lemon juice

  • ¼ cup fresh parsley, chopped

  • ½ cup grated Parmesan cheese, plus more for serving

  • Salt and black pepper, to taste


Instructions

  • Cook the pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions. Reserve 1 cup of pasta water, then drain and set aside.

  • Sear the shrimp: Pat shrimp dry, season with salt and pepper. Heat 1 tablespoon olive oil and 1 tablespoon butter in a skillet over medium-high heat. Cook shrimp 1–2 minutes per side until pink and curled into a “C” shape. Transfer to a plate.

  • Make the sauce: Add remaining olive oil and butter to the same skillet. Stir in garlic and red pepper flakes, cooking until fragrant (30 seconds). Deglaze with wine or broth, simmering 1–2 minutes.

  • Combine everything: Add pasta and a splash of reserved pasta water to the skillet. Toss well, then return shrimp, lemon juice, and parsley. Mix until glossy and coated.

  • Finish: Stir in Parmesan, taste, and adjust seasoning. Serve hot with extra Parmesan and parsley.

Notes

  • Reduce red pepper flakes for milder spice or add more for extra heat.

  • Add broccoli, spinach, or zucchini for more veggies.

  • For creamy noodles, stir in ¼ cup heavy cream at the end.

  • Best enjoyed fresh—leftovers can be refrigerated for up to 2 days.
