This Spicy Rattlesnake Pasta is creamy, cheesy, and just the right amount of spicy—perfect for a quick weeknight dinner or a cozy meal with friends. With tender chicken, melty cheeses, and a touch of lime and cilantro, it’s a flavor-packed dish that’s as fun to make as it is to eat.
Ingredients
12 oz fettuccine
2 large chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
3 cloves garlic, minced
1 tsp paprika
¼ tsp cayenne pepper (optional)
1 cup heavy cream
1 cup shredded pepper jack cheese
½ cup grated Parmesan cheese
1 tbsp lime juice
2 tbsp chopped fresh cilantro
Salt & pepper, to taste
Instructions
Cook fettuccine in salted boiling water until al dente; drain and reserve ½ cup pasta water.
In a large skillet, sauté chicken in olive oil with paprika, cayenne, salt, and pepper until golden and cooked through.
Add garlic and sauté until fragrant (about 30 seconds).
Pour in heavy cream and simmer 2–3 minutes to thicken slightly.
Stir in cheeses until melted and smooth; add reserved pasta water if needed.
Toss in cooked fettuccine until evenly coated.
Stir in lime juice and sprinkle with cilantro before serving.
Notes
Adjust spice by reducing or increasing cayenne pepper.
Swap chicken for shrimp, salmon, tofu, or vegetables.
Make a vegetarian version by replacing chicken with sautéed veggies.
Store leftovers in an airtight container in the fridge for up to 3 days; reheat gently with a splash of cream.
