- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 4 oz cream cheese, softened
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine chopped fresh spinach, softened cream cheese, minced garlic, and grated Parmesan. Mix thoroughly until well combined.
- Butterfly the chicken breasts horizontally to create a pocket.
- Spoon spinach filling into each chicken breast pocket and secure with toothpicks.
- Season each chicken breast with salt and pepper. Heat olive oil in an oven-safe skillet over medium-high heat, and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until cooked through (internal temperature reaches 165°F).
- Remove from oven, let rest, then slice and serve.
Notes
For an alternative, use Greek yogurt instead of cream cheese, and consider using nutritional yeast for a dairy-free option.
