Ingredients

  • Fresh strawberries (or thawed frozen strawberries)
  • 8 oz cream cheese
  • 3/4 cup granulated sugar
  • 1 box yellow cake mix
  • 1/2 cup melted butter (or coconut oil for dairy-free)
  • 1 tsp vanilla extract (or almond extract)
  • Optional: whipped cream and fresh mint for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with butter or non-stick spray.
  3. Evenly distribute the sliced strawberries across the bottom of the baking dish.
  4. In a medium bowl, mix the cream cheese and sugar until smooth. Spread this layer over the strawberries.
  5. Sprinkle the dry cake mix evenly over the cheesecake layer.
  6. Melt the butter and pour it evenly over the cake mix.
  7. Place the baking dish in the preheated oven and bake for 40-45 minutes, until the top is golden brown.
  8. Let the dump cake cool before serving. Add whipped cream on top if desired.

Notes

For a lower-fat option, use light cream cheese. Store leftovers in an airtight container in the fridge for up to three days.
