Instructions
- Prepare the Strawberries: Wash and slice the fresh strawberries into thin pieces and set aside.
- Mix the Dry Ingredients: In a bowl, whisk together almond flour, matcha powder, and salt.
- Combine the Wet Ingredients: In another bowl, mix together coconut milk, honey, vanilla extract, and eggs.
- Blend the Mixtures: Gradually add the dry ingredients to the wet mixture until smooth.
- Heat the Pan: Preheat a non-stick frying pan over medium heat, lightly coated with coconut oil.
- Cook the Rolls: Pour a small amount of batter into the pan, spreading it thin. Cook for 2-3 minutes, flip, and cook for another 1-2 minutes.
- Assemble the Rolls: Place the cooked layer on a plate, layer with strawberries, and roll up. Repeat with remaining batter.
- Serve Warm: Dust with matcha powder and serve warm.
