A delightful twist on classic desserts combining creamy cheesecake flavor in soft, buttery rolls topped with fresh strawberries.
Ingredients
- Fresh Strawberries (2 cups)
- Cream Cheese (8 oz)
- Powdered Sugar (1 cup)
- Vanilla Extract (1 tsp)
- Heavy Cream (1 cup)
- All-Purpose Flour (1 cup)
- Baking Powder (1 tsp)
- Salt (1/4 tsp)
- Eggs (2 large)
- Unsalted Butter (1/4 cup)
Instructions
- Prepare the Strawberries: Wash and slice the strawberries, sprinkle with sugar, and set aside for 10-15 minutes.
- Bake the Roll Base: Preheat oven to 350°F (175°C). Mix flour, baking powder, and salt. Cream together butter and sugar, add eggs and vanilla, then combine with dry ingredients. Spread on baking sheet and bake for 15-20 minutes.
- Spread and Roll: Remove from oven, flip onto a powdered sugar dusted towel, and roll while warm. Let cool completely.
- Make the Cheesecake Filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream until stiff peaks form and fold into the cream cheese mixture.
- Assemble the Rolls: Unroll the cooled cake, spread filling, add strawberries, and roll back up. Chill in plastic wrap for at least 30 minutes.
- Slice and Serve: Unwrap, slice into 1-inch pieces, and garnish as desired.
Notes
Chill rolls to help the filling set before slicing for cleaner cuts. Can be made a day ahead.
