Delightful fusion of cheesecake and strawberry shortcake, beautifully rolled in puff pastry.
Ingredients

- 2 cups Fresh Strawberries
- 8 ounces Cream Cheese
- 1 cup Whipped Cream
- 1/2 cup Granulated Sugar
- 1 teaspoon Vanilla Extract
- 2 Puff Pastry Sheets
- Powdered Sugar for dusting
Instructions
- Prepare the strawberries by washing, hulling, and slicing. Sprinkle sugar over them and let sit for 10 minutes.
- In a mixing bowl, combine cream cheese, whipped cream, sugar, and vanilla. Beat until smooth and fluffy.
- Preheat the oven to 400°F (200°C) and roll out puff pastry to 1/8 inch thickness.
- Spread cheesecake filling over the pastry, top with strawberries, and roll into a log.
- Slice the log into 1-inch pieces and place on a baking sheet. Bake for about 20 minutes until golden brown.
- Let cool slightly and dust with powdered sugar before serving.
Notes
For a lighter version, use reduced-fat cream cheese or Greek yogurt. Frozen strawberries can be used but may release more moisture.
