  • 50g Icing Sugar
  • 30ml Vegetable Oil
  • 150ml Water
  • 100g Strawberry Puree
  • 150g Red Bean Paste
  • Cornstarch (for dusting)

Instructions

  1. Prepare Your Ingredients: Gather all your ingredients and measure them out for an efficient process.
  2. Make the Snow Skin Mixture: In a mixing bowl, combine glutinous rice flour, icing sugar, and vegetable oil. Gradually add water and mix until the dough is smooth.
  3. Steam the Mixture: Transfer the dough to a heatproof dish and steam for about 20 minutes, covering it to prevent drippage.
  4. Create the Strawberry Filling: Blend ripe strawberries to create a smooth puree, sweetening if necessary.
  5. Combine the Fillings: Roll the red bean paste into balls and the strawberry puree into discs.
  6. Assemble the Mooncakes: Flatten a portion of dough, add a ball of red bean paste and a disc of strawberry puree, then wrap and seal the dough.
  7. Mold the Mooncakes: Dust mooncake molds with cornstarch, place filled dough balls in, and press down gently before removing.
  8. Chill and Serve: Chill the mooncakes in the fridge for at least one hour before serving.
