- 50g Icing Sugar
- 30ml Vegetable Oil
- 150ml Water
- 100g Strawberry Puree
- 150g Red Bean Paste
- Cornstarch (for dusting)
Instructions
- Prepare Your Ingredients: Gather all your ingredients and measure them out for an efficient process.
- Make the Snow Skin Mixture: In a mixing bowl, combine glutinous rice flour, icing sugar, and vegetable oil. Gradually add water and mix until the dough is smooth.
- Steam the Mixture: Transfer the dough to a heatproof dish and steam for about 20 minutes, covering it to prevent drippage.
- Create the Strawberry Filling: Blend ripe strawberries to create a smooth puree, sweetening if necessary.
- Combine the Fillings: Roll the red bean paste into balls and the strawberry puree into discs.
- Assemble the Mooncakes: Flatten a portion of dough, add a ball of red bean paste and a disc of strawberry puree, then wrap and seal the dough.
- Mold the Mooncakes: Dust mooncake molds with cornstarch, place filled dough balls in, and press down gently before removing.
- Chill and Serve: Chill the mooncakes in the fridge for at least one hour before serving.
