Ingredients
- Cornish Game Hens (2)
- Olive Oil (2 tablespoons)
- Garlic (4 cloves, minced)
- Shallots (1 cup, chopped)
- Mushrooms (1 cup, chopped)
- Bread Crumbs (1 cup)
- Spinach (2 cups, fresh)
- Herbs (1 teaspoon each – thyme, rosemary, parsley)
- Chicken Broth (1 cup)
- Salt and Pepper (to taste)
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the Cornish game hens under cold water and pat them dry with paper towels.
- In a skillet, heat olive oil over medium heat. Add minced garlic and chopped shallots, sauté for 2-3 minutes until fragrant. Stir in chopped mushrooms and sauté for another 5 minutes until softened.
- In a large bowl, combine the sautéed vegetables with breadcrumbs, spinach, herbs, and chicken broth. Season with salt and pepper, mixing until evenly combined.
- Gently fill the cavity of each bird with the stuffing mixture, packing it loosely.
- Place the stuffed Cornish game hens in a roasting pan breast-side up. Brush with additional olive oil and sprinkle with salt and pepper. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C).
- Remove the hens from the oven and let them rest for 10 minutes before serving.
Notes
Avoid overstuffing the hens for even cooking. Prepare the stuffing in advance to save time.
