Description

A delicious and healthy blend of sweet potatoes and tart cranberries, baked to perfection with creamy goodness and melty cheese.


Ingredients

  • 2 lbs sweet potatoes, peeled and sliced into thin rounds
  • 2 cups fresh cranberries
  • 1 cup heavy cream (or half-and-half)
  • 1 cup grated Gruyere cheese (or aged Gouda/cheddar)
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme (or rosemary/sage)
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes into thin rounds, about 1/4 inch thick.
  3. In a mixing bowl, combine the heavy cream with minced garlic, thyme, salt, and pepper.
  4. In a greased baking dish, layer the sweet potato rounds followed by a sprinkle of cranberries, repeating until all are used.
  5. Pour the cream mixture evenly over the layered ingredients.
  6. Sprinkle the grated Gruyere cheese on top. Add breadcrumbs if desired.
  7. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 20 minutes.
  8. Let the gratin rest for about 10 minutes before slicing.

Notes

For a lighter version, consider using half-and-half or plant-based cream. For gluten-free, use gluten-free breadcrumbs.
