A delicious and healthy blend of sweet potatoes and tart cranberries, baked to perfection with creamy goodness and melty cheese.
Ingredients

- 2 lbs sweet potatoes, peeled and sliced into thin rounds
- 2 cups fresh cranberries
- 1 cup heavy cream (or half-and-half)
- 1 cup grated Gruyere cheese (or aged Gouda/cheddar)
- 3 cloves garlic, minced
- 1 tsp fresh thyme (or rosemary/sage)
- Salt and pepper to taste
- 1 cup panko breadcrumbs (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and slice the sweet potatoes into thin rounds, about 1/4 inch thick.
- In a mixing bowl, combine the heavy cream with minced garlic, thyme, salt, and pepper.
- In a greased baking dish, layer the sweet potato rounds followed by a sprinkle of cranberries, repeating until all are used.
- Pour the cream mixture evenly over the layered ingredients.
- Sprinkle the grated Gruyere cheese on top. Add breadcrumbs if desired.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 20 minutes.
- Let the gratin rest for about 10 minutes before slicing.
Notes
For a lighter version, consider using half-and-half or plant-based cream. For gluten-free, use gluten-free breadcrumbs.
