  • 4 oz goat cheese, crumbled or small rounds
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons chopped walnuts or pecans
  • pinch of red pepper flakes

  • Instructions

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment for easy cleanup.
  • Slice the sweet potatoes into rounds about 1/4 inch thick. Pat them dry so they crisp rather than steam.
  • Toss the rounds with olive oil, salt, pepper, and garlic powder until evenly coated.
  • Spread the rounds in a single layer on the prepared sheet. Bake for 18–22 minutes, turning halfway, until the edges are golden and the centers are tender.
  • Remove from the oven. Top each round with goat cheese and drizzle with honey. Scatter thyme and nuts if using. If you like melted cheese, pop the tray back under the broiler for 1–2 minutes, watching closely so they don’t burn.
  • Serve warm, with an extra drizzle of honey if desired. The rounds should be crisp on the outside, soft inside, and glossy where the cheese meets honey.
