These sweetcorn brunch fritters are crispy on the outside, fluffy on the inside, and bursting with flavor. Perfect for weekend brunch, weekday snacks, or as a fun appetizer, they’re quick to make, endlessly versatile, and sure to become a family favorite.
Ingredients
1 ½ cups sweetcorn (fresh, canned, or frozen – drained well if canned/frozen)
¾ cup all-purpose flour (or gluten-free blend)
2 large eggs
¼ cup milk (any type)
1 tsp baking powder
2–3 green onions, finely chopped
½ cup grated cheddar cheese
Salt & pepper, to taste
Olive oil, for frying
Optional Add-Ins:
Fresh herbs (parsley, cilantro, dill)
Chili flakes or jalapeños for spice
Instructions
Prep the corn: drain canned, thaw frozen, or cut kernels off fresh cobs.
In a medium bowl, whisk flour, baking powder, salt, and pepper.
In another bowl, beat eggs and whisk in milk.
Combine wet and dry ingredients until just mixed—don’t overmix.
Fold in sweetcorn, green onions, cheddar, and any optional add-ins.
Heat olive oil in a skillet over medium heat.
Drop 2 tablespoons of batter per fritter into the pan and flatten slightly.
Cook 2–3 minutes per side, until golden and crispy.
Drain on paper towels and serve hot.
Notes
For extra crispy fritters, make sure corn is dry before mixing.
To store: keep in the fridge up to 3 days or freeze for 2 months.
Reheat in oven or air fryer for best texture.
Great served with sour cream, salsa, or a runny egg on top.
