A vibrant and nutritious salad combining fresh cucumbers, grilled chicken, and aromatic herbs, tossed with a tangy lime dressing.


Ingredients

  • 2 medium Cucumbers
  • 1 pound Chicken Breast
  • 1 small Red Onion
  • 1/4 cup Fresh Mint Leaves
  • 1/4 cup Fresh Cilantro
  • 12 whole Thai Chili (to taste)
  • 1 lime (zest and juice)
  • 2 tablespoons Fish Sauce
  • 1 tablespoon Granulated Sugar
  • Salt (to taste)

Instructions

  1. Season the chicken breast with salt and pepper. Grill over medium heat for about 5-7 minutes on each side until cooked through. Let rest before slicing thinly.
  2. Wash and thinly slice the cucumbers, red onion, and mint.
  3. In a small bowl, combine lime juice, lime zest, fish sauce, sugar, and chopped Thai chili. Whisk until sugar dissolves.
  4. In a large bowl, combine sliced chicken, cucumbers, red onion, mint, and cilantro. Pour dressing over and toss to coat.
  5. Taste and adjust seasoning. Serve immediately or refrigerate for 30 minutes to meld flavors.

Notes

For a vegetarian option, substitute grilled tofu for the chicken. Store in an airtight container for up to 2 days.
