Ingredients

- 2 medium Cucumbers
- 1 pound Chicken Breast
- 1 small Red Onion
- 1/4 cup Fresh Mint Leaves
- 1/4 cup Fresh Cilantro
- 1–2 whole Thai Chili (to taste)
- 1 lime (zest and juice)
- 2 tablespoons Fish Sauce
- 1 tablespoon Granulated Sugar
- Salt (to taste)
Instructions
- Season the chicken breast with salt and pepper. Grill over medium heat for about 5-7 minutes on each side until cooked through. Let rest before slicing thinly.
- Wash and thinly slice the cucumbers, red onion, and mint.
- In a small bowl, combine lime juice, lime zest, fish sauce, sugar, and chopped Thai chili. Whisk until sugar dissolves.
- In a large bowl, combine sliced chicken, cucumbers, red onion, mint, and cilantro. Pour dressing over and toss to coat.
- Taste and adjust seasoning. Serve immediately or refrigerate for 30 minutes to meld flavors.
Notes
For a vegetarian option, substitute grilled tofu for the chicken. Store in an airtight container for up to 2 days.
