Ingredients

  • 1 cup jasmine rice
  • 1 cup fresh pineapple, diced
  • 1/2 cup bell peppers, diced
  • 1/2 cup peas
  • 1 cup protein (shrimp, chicken, or tofu)
  • 2 eggs (omit for vegan version)
  • 2 tbsp soy sauce
  • 1 tsp curry powder
  • 2 tbsp lime juice
  • Oil for cooking

Instructions

  1. Rinse jasmine rice under cold water until water runs clear, then cook according to package instructions.
  2. In a hot skillet, scramble the eggs until just set, then remove and set aside.
  3. Add oil to the skillet, sauté the bell peppers and peas until slightly tender, about 3-4 minutes, then add minced garlic.
  4. Add the cooked rice and pineapple, stirring gently; cook for an additional 5 minutes.
  5. Mix in the chosen protein, add soy sauce and curry powder, adjusting taste as necessary.
  6. Finish with lime juice and add the scrambled eggs, tossing together gently.
