Description

A delicious and nutritious twist on a classic quiche, using tortillas as the base instead of traditional pastry for an easy weeknight meal.


Ingredients

  • Flour or corn tortillas
  • 4 organic free-range eggs
  • 1 cup milk (or dairy-free alternative)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 cup fresh spinach
  • Salt to taste
  • Pepper to taste
  • Optional seasonings: oregano, basil, cayenne

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly coat the bottom of a pie dish with cooking spray or oil and layer tortillas on the bottom, overlapping slightly.
  3. Sauté diced onions and bell peppers in a skillet over medium heat until tender, about 5 minutes, then add spinach and season with salt and pepper.
  4. In a large mixing bowl, whisk together eggs, milk, and seasonings.
  5. Add sautéed vegetables and cheese to the egg mixture, stirring to combine.
  6. Pour the filling into the tortilla-lined dish and bake for 30-40 minutes until set and golden on top.
  7. Allow to cool for 5-10 minutes before slicing and serving.
