- 4 organic free-range eggs
- 1 cup milk (or dairy-free alternative)
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 cup fresh spinach
- Salt to taste
- Pepper to taste
- Optional seasonings: oregano, basil, cayenne
Instructions
- Preheat your oven to 350°F (175°C).
- Lightly coat the bottom of a pie dish with cooking spray or oil and layer tortillas on the bottom, overlapping slightly.
- Sauté diced onions and bell peppers in a skillet over medium heat until tender, about 5 minutes, then add spinach and season with salt and pepper.
- In a large mixing bowl, whisk together eggs, milk, and seasonings.
- Add sautéed vegetables and cheese to the egg mixture, stirring to combine.
- Pour the filling into the tortilla-lined dish and bake for 30-40 minutes until set and golden on top.
- Allow to cool for 5-10 minutes before slicing and serving.
