Description

A classic Turkish pastry delight with a crispy exterior and syrupy sweetness that evokes nostalgia and tantalizes the taste buds.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour (or whole wheat flour)
  • 2 large eggs (or flax eggs)
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 tbsp lemon juice
  • Oil for frying

Instructions

  1. In a saucepan, combine water, butter, and sugar. Bring to a gentle boil, then remove from heat and gradually add flour, mixing until a dough forms.
  2. Allow the mixture to cool slightly, then incorporate eggs one at a time, mixing until smooth.
  3. Stir in salt and baking powder until evenly distributed.
  4. Heat oil in a deep fryer or large pot to 180°C (356°F).
  5. Using a piping bag, pipe the dough into long ribbons into the hot oil, cutting each piece to about 5cm (2 inches) long.
  6. Fry until golden brown, then drain on paper towels.
  7. In a separate saucepan, mix sugar, water, and lemon juice, boil, and simmer until slightly thickened.
  8. Dip each tulumba into the syrup for a few seconds to soak up the sweetness.

Notes

Serve alongside ice cream or drizzled with chocolate for added flavor. Garnish with crushed pistachios for presentation.
