- 2 cups cottage cheese
- 2 cups russet potatoes, peeled and cubed
Instructions
- Begin by peeling and chopping your russet potatoes into small cubes.
- Place the chopped potatoes in a pot of boiling water and boil for about 15 minutes, or until tender.
- Once cooked, drain the potatoes and let them sit for a minute to cool slightly.
- In the pot with the drained potatoes, add the cottage cheese and mix until combined.
- Form the mixture into small tot shapes.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the formed tots on the baking sheet and bake for about 20 minutes, turning halfway through.
- Allow the tots to cool slightly before serving.
Notes
For a lower-carb version, substitute potatoes with cauliflower. For a tangy flavor, you can use Greek yogurt in place of cottage cheese.
