Description

Delicious, simple, and nutritious cottage cheese tots made with just two ingredients.


Ingredients

  • 2 cups cottage cheese
  • 2 cups russet potatoes, peeled and cubed

Instructions

  1. Begin by peeling and chopping your russet potatoes into small cubes.
  2. Place the chopped potatoes in a pot of boiling water and boil for about 15 minutes, or until tender.
  3. Once cooked, drain the potatoes and let them sit for a minute to cool slightly.
  4. In the pot with the drained potatoes, add the cottage cheese and mix until combined.
  5. Form the mixture into small tot shapes.
  6. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  7. Place the formed tots on the baking sheet and bake for about 20 minutes, turning halfway through.
  8. Allow the tots to cool slightly before serving.

Notes

For a lower-carb version, substitute potatoes with cauliflower. For a tangy flavor, you can use Greek yogurt in place of cottage cheese.
