- 1 cup Unsalted Butter
- 1 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 2 cups All-Purpose Flour
- 1/3 cup Cocoa Powder
- 2 large Eggs
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 cup Chocolate Chips
- 1/2 cup Heavy Cream
Instructions
- In a large mixing bowl, beat the unsalted butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this dry blend to the butter mixture until just combined.
- Gently fold in your chocolate chips.
- Cover the dough and refrigerate for at least 30 minutes.
- In a small saucepan over low heat, combine heavy cream and remaining chocolate chips. Stir until melted and smooth, then let it cool slightly.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper and scoop dough balls onto the sheets.
- Bake in the preheated oven for 12-15 minutes or until edges are set.
- Immediately after removing cookies from the oven, press a hole into the center of each cookie and fill with ganache.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks.
Notes
These cookies are best served warm, with a sprinkle of sea salt for added flavor.
