Description

Ingredients

  • 1 cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 2 cups All-Purpose Flour
  • 1/3 cup Cocoa Powder
  • 2 large Eggs
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Chocolate Chips
  • 1/2 cup Heavy Cream

Instructions

  1. In a large mixing bowl, beat the unsalted butter, granulated sugar, and brown sugar together until light and fluffy.
  2. Add the eggs one at a time, beating well after each addition.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this dry blend to the butter mixture until just combined.
  4. Gently fold in your chocolate chips.
  5. Cover the dough and refrigerate for at least 30 minutes.
  6. In a small saucepan over low heat, combine heavy cream and remaining chocolate chips. Stir until melted and smooth, then let it cool slightly.
  7. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper and scoop dough balls onto the sheets.
  8. Bake in the preheated oven for 12-15 minutes or until edges are set.
  9. Immediately after removing cookies from the oven, press a hole into the center of each cookie and fill with ganache.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks.

Notes

These cookies are best served warm, with a sprinkle of sea salt for added flavor.
