  • Instructions

  • Heat a skillet over medium-high, then add the olive oil. When shimmering, crumble in the ground beef and sear, stirring occasionally, until browned and slightly crisp at the edges—about 6 to 8 minutes.
  • Push the beef to one side, add a touch more oil if the pan seems dry, and toss in the minced garlic. Sauté until fragrant, 20–30 seconds.
  • Stir in the soy sauce or tamari, honey, hot honey, and rice vinegar or lime juice. Let the mixture bubble gently and reduce until it’s a glossy glaze that coats the beef, about 2–3 minutes. If it thickens too fast, loosen with a teaspoon of water.
  • Taste and adjust: add a pinch more salt if needed, a splash more lime for brightness, or another drizzle of hot honey if you love a stronger kick. The sauce should cling to the beef without being gluey.
  • Prepare the base: fluff the rice and keep it warm, or quickly sauté cauliflower rice in a splash of oil with a pinch of salt until just tender, 3–5 minutes.
  • Assemble bowls: start with a bed of rice, spoon on the glossy beef, and drizzle any extra glaze over the top. Finish with lime juice, cilantro or green onions, and your optional toppings for color and crunch.
