- 1 medium cucumber, sliced into quarter moons
- 1 small red onion, finely chopped

- 1/4 cup fresh basil, chopped
- Salt to taste

Instructions
- Prep Your Ingredients: Wash the cherry tomatoes and cucumber thoroughly, halve the tomatoes and slice the cucumber into quarter moons. Finely chop the red onion.
- Crush the Garlic: Crush the garlic cloves until slightly flat and then mince them finely.
- Combine in a Mixing Bowl: In a large bowl, mix the diced tomatoes, cucumbers, minced garlic, chopped red onion, and basil.
- Dress the Salad: Drizzle olive oil and balsamic vinegar over the mixed ingredients and stir gently. Season with salt and pepper to taste.
- Taste and Adjust: Toss the salad and taste, adjusting seasonings as necessary.
- Chill & Serve: Let the salad sit for about 15-20 minutes to meld flavors. Toss again before serving.
Notes
For a low-carb version, substitute cucumbers with zucchini. Adding feta or garbanzo beans can increase protein content.
